Miller – Baker workshop in Martonvásár (Hungary)

On November the 30th ÖMKi (Ökológiai Mezőgazdasági Kutatóintézet) organised Miller – Baker workshop in Martonvásár, in the framework of DIVINFOOD project. The focus was on flour quality testing methods, the event was hosted by the Agricultural Institute of HUN-REN ATK. During the technical presentations the participants could deepen their knowledge on quality standards, parameters and quality measurement methods of wheat and hulled minor cereals including einkorn end emmer. Then we got around the Flour Laboratory. The colleagues from Martonvásár gave a detailed demonstration of the institute’s threshing and hulling machines, the various quality-testing instruments, and a live demonstration of the wet gluten and extensograph tests. The day ended with an intense exchange of ideas and experience, but also raised many old and new questions about the domestic cereal supply chains, so there will surely be more to come!

The aim of the event was to discuss the current situation and challenges in the production and use of organic wheat and ancient cereals in Hungary, to assess the changing needs of market actors and to strengthen the cooperation between the actors in the emmer- einkorn supply chain.
