The aim of the Living Lab is to integrate research and innovation and share knowledge within the field of growing and processing blue lupins, grey peas and lentils in the Nordic territory. Challenges and opportunities are to breed for intercropping, short growing season and low temperature, cultural heritage of landraces and ultimately to expand the market of plant-based products. Additionally, participants in Leg-Nord will have a huge impact on the topics and focus areas within the framework.  

The Living Lab focuses on the value chain from cultivation to soft processing, e.g. sorting and dehulling. The Living Lab wishes to develop a platform for sharing of knowledge between participants. The project will collect data and communicate the gained knowledge. The Living Lab is open, meaning that relevant participants can be invited later in the project, as we progress in the different processes.
